Arakeerai Muttai Poriyal

ARAKEERAI MUTTAI PORIYAL
Ingredients:
ara keerai - cleaned and finely chopped - 2 cups
eggs - 3
green chillies - 3
garlic - peeled - 1 handful
onions - 2 finely chopped
salt to taste
oil - 2 tbsp
mustard seeds - 1tsp
urad dal - 1 tsp

Method:
- in a pan add oil
- when the oil is hot add the mustard seeds and urad dal


- when the dal changes its colour to golden brown add the onions, green chillies and garlic and fry
- fry until all the ingredients change to golden brown
- add salt


- move the entire ingredients to one corner of the pan
- break open the eggs on the other end of the pan and then leave it to sit for 1 minutes


- start to mix the eggs finely until they resemble scrambled eggs
- mix the eggs with the greens and mix well for 2 minutes


- serve
