Aloo Paratha

ALOO PARATHA
Ingredients:
To make flour:
Wheat flour – 1 cup
Salt – ½ tsp
Water – as much as required
Oil – 2 – 3 tsp

To make paratha:
Potatoes – 4 (boiled)
Onions – 2 (finely chopped)
Green chillies – 2
Red chilli powder – ½ tsp
Turmeric powder – ¼ tsp
Ginger garlic paste – 1 tsp
Salt to taste
Cumin powder – ¼ tsp
Oil – 2 – 3 tsp

To make the curd:
Thick curd – 2 cups
Red chilli – ¼ tsp
Salt to taste

Method:
To make the dough:
- add wheat flour, salt and water and make a dough
- add oil and make a very soft dough and leave it to rest for ½ an hour

To make the filling:
- peel and smash the potatoes
- in a wok add oil
- add the onions and fry until they are golden brown
- add the ginger garlic paste, salt, green chillies, cumin powder, turmeric powder and red chilli powder
- mix well and then add that to the potatoes
- mix well without any lumps and keep it aside

To make paratha:
- make balls out of the dough
- make balls out of the potato mixture which is just ¾th size of the dough - roll the dough into a thick chappathi as shown- keep the potato ball in between and close the ball with the dough as shown - now roll out the paratha with the help of the flour as shown
- in a pan add oil and place the paratha
- spread oil on both the sides and cook until they turn golden brown - serve with curd

To make the curd:
- mix curd, salt and red chilli powder
- serve it for any stuffed paratha
