Swiss Roll

SWISS ROLL (MICROWAVE)
(Jam Roll)
Ingredients:

flour - 1 cup
powdered sugar - 1 cup + 1 tbsp
baking powder - 1 tsp
jam - 100 gm
cornflour - 2 tsp
eggs - 3
vanilla essence - 1 tsp
Baking sheet - 1/2

Method:
- remove 2 tsp of flour from 1 cup
- substitute 2 tsp of flour with 2 tsp of corn flour
- this will make the roll softer
- seive flour + cornflour and the baking powder thrice
- leave them aside
- break the eggs in a bowl and beat them- add the powdered sugar little by little and beat them until the egg is pale and fluffy
- add the vanilla essence and beat again
- add the flour mixture little by litte and beat
- beat them preferably in one direction and mix all of them
- do not over beat the mixture after the flour is added- preheat the oven in 180 degrees
- then grease the pan with oil and then place a baking sheet in the baking tray
- pour in the mixture until they are 3/4th of the tray
- bake at 180 degrees for 15 - 20 minutes
- check if the tooth pick which is inserted comes out clean
- then spread a baking sheet
- sprinkle 1 tsp of powdered sugar
- remove the cake and spread them on the sheet while the cake is hot
- now spread in the jam evenly
- roll the cake with the jam
- roll the baking sheet as well on the rolled cake
- pack them tightly and allow them to cool
- now when they are cool remove the baking powder
- and slice them into 2" cake slices

variation:
Any jam can be used of your choice.
