Manathakkali Vathal Kulambu

MANATHAKKALI VATHAL KULAMBU

Ingredients:
manathakkali vathal - 4 tbsp
onions - 2 (cut lengthwise)
tomatoes - 2 (cut into cubes)
peeled garlic - a handful
salt to taste
tamrind water made frm a lemon sized tamarind
red chilli powder - 1 tsp
corriander powder - 1 tsp
masala powder (refer powders page) - 1 tsp
turmeric powder - 1/2 tsp
curry leaves - a handful
water
oil - 2 tbsp
mustard seeds - 1 tsp
urad dal - 1/2 tsp
channa dal - 1/2 tsp
vadagam - 1 tbsp (refer vadagam page)


Method:
- in a pan add oil
- add the manathakkali vathal and fry for 2 mins in low flame
- remove and leave it aside
- in the same oil add vadagam, mustard seeds, urad dal and channa dal
- when the channa dal and urad dal changes colour add curry leaves and garlic and fry for 2 mins
- add the onions and tomatoes and fry for 5 mins
- to that add red chilli powder, salt, turmeric powder, hing, corriander powder, masala powder and water
- allow that to boil until the raw smell is gone
- to that add the manathakkali vathal (the fried one) and the tamarind water
- bring them to a boil and when mixture thickens serve hot with steamed rice
