Parangikai Poriyal

(Yellow pumpkin recipe)

parangikkai (yellow pumpkin) - 1/4 kg
red chillies - 4
onion - 1/2 (thinly sliced)
mustard seeds - 1 tsp
urad dal - 1/2 tsp
salt to taste
curry leaves - 1 sprig
oil - 1 tbsp

- remove the skin and cut the pumpkin into cubes
- in a pan add oil
- add mustard seeds and urad dal
- when the dal changes colour add red chillies, curry leaves, onions and parangikkai
- fry well until the onions are golden brown
- add salt to taste
- sprinkle water if necessary
- when the vegetable is soft serve hot with rice as a side dish.

Sugar can also be added if you want the dish to be a bit sweet!! I didnt add here..
