Aloo Methi Fry




Ingredients:
potato - 4 (big)
methi leaves - cleaned - 1.5 cups
onions - 2
tomatoes - 2
ginger garlic paste - 2 tsp
salt to taste
turmeric powder - 1/4 tsp
red chilli powder - 1.5 tsp
oil - 4 - 5 tbsp
mustard seeds - 1 tsp
urad dal - 1 tsp

Method:
- chop the onions and tomatoes finely
- boil the potatoes and peel their skin
- cut the potatoes into cubes and keep them aside
- in a pan add oil and add mustard seeds
- when they splutter add the urad dal and wait until they turn golden brown
- add the onions and fry till they are trasnsparent
- add the tomatoes and fry
- add the salt, turmeric powder and fry
- add the ginger garlic paste and fry
- to this add the methi leaves and fry
- fry them till they get cooked.
- add the red chilli powder and fry
- add 1/2 a cup of water and then fry now and wait till come to a boil
- add the boiled potato cubes and wait until the water completely evaporates
- serve with chappathi or rice as a side dish
